I’m a huge fan of cooking with beer. My favorite thing to make is Spent Grain Bread. But here is a new recipe I found that I think is worth giving a try: Cheddar and Beer Soup!
Melt 4 tablespoons of butter in a large saucepan. Add 1/2 yellow onion, 1 celery stalk, 2 small carrots, and 1 garlic clove, all finely chopped. Cooked until softened. Stirring constantly, add 1/2 cup flour and cook for 3 minutes. Add 2 cups of chicken broth slowly and cook until a thick smooth paste forms. Still stirring, slowly add 2 cuts of milk, then one 12-ounce lager or pale ale. (Might I suggest Hopworks HUB Organic Lager?) Cook until thickened slightly, then add 3 cups of grated cheddar, 1 1/2 teaspoons of salt, 1/4 teaspoon pepper, and 1 tablespoon of sugar. Simmer for 20 minutes, stirring occasionally.

Good idea. I could add the bread one there too. (And I’ve heard you can make dog biscuits with spent grain too!)
