Spent Grain Bread Recipe

Posted on May 13, 2011 · 2 Comments

After brewing beer, my kitchen smells a little funky.  Personally, I love them smell of beer.  However, I recognize that other people don’t share my same love for the smell of beer.  These people include: my mother and my roommate.  They do like the smell of fresh baked bread.  I think everyone likes the smell of fresh bread.  So I take the spent grain from the beer process and bake bread.  This also makes a great housewarming gift, a six pack of homebrew and a loaf of spent grain bread.  Here is the recipe I use:

Ingredients:

  • 1.5 T. of Yeast
  • 1 T. Salt
  • 2 C. Water
  • 6 C. Flour
  • 3 C. Spent Grains

Directions:

  1. Dissolve the yeast in lukewarm water.
  2. Add salt.
  3. Mix in the rest of the ingredients.
  4. Pour the slurry and mix well.  When it all clings together put on a table top and kneed out.  You want it smooth but not clingy.
  5. Put dough back in the bowl.  Leave it out overnight.
  6. Kneed again.  Give it the shape you want the loafs to be and let it rise for another hour.
  7. Bake for 40 minutes at 400*F.  It’s done when you tap the loaf and it sounds hallow.

This is a super hearty bread.  Great warm with butter or covered in honey.

One of my best friends from high school, Jon, taught me this recipe while visiting back in 2008.  Definitely the best beer bread I’ve ever had.  WAY better than the stuff you can buy at the store.

Ingredients:

  • 3 C. Flour
  • 1/2 C. Sugar
  • 3 t. Baking Powder
  • 1 Dark Beer (Room Temperature)*
  • 3/4 Stick of Melted Butter

* We used Sam Adam’s Cream Stout

Directions:

  1. Preheat oven to 350 degrees
  2. Grease loaf pan
  3. Mix flour, sugar, baking powder, and beer
  4. Pour into pan
  5. Bake for 45 minutes
  6. Then pour melted butter on top
  7. Bake for an additional 15 minutes
  8. Cool and enjoy!
